Concord Hospitality Enterprises and HKS Holdings LLC, in collaboration with the Fifty/50 Restaurant Group, today announced its newest restaurant, Eldr+Rime, which is set to open just west of Milwaukee in August 2020. Located on the bustling Northwest side of Wauwatosa at 2300 N. Mayfair Rd., Eldr+Rime is led by Executive Chef Gary Baca and will feature New American cuisine with nods to Scandinavian flavors and traditions. The modern dining destination will have a spacious and socially distanced full dining room, full-service bar, bar with seating in front of the open kitchen, two private dining rooms and an outdoor patio, which together will encompass 6,800 sq. ft. With guest and staff's well-being on the top of its priority list, Eldr+Rime will begin service with several safety guidelines, in accordance with local directives and recommendations.
Eldr+Rime, which translates to "fire and ice," will present a seasonally focused menu and inspiration from Northern European taste that ensures every dish is fresh. The menu will feature several thoughtfully developed items to include staples like steaks, fresh fish, hearty grains and chilled and composed seafood from the raw bar. The extensive beverage menu also riffs off Scandinavian culture and will offer a variety of buzz-worthy crafted cocktails. The elaborative wine list will include handpicked varieties by the sommelier, that pay homage to an array of regions and continents.
Cooking techniques at Eldr+Rime will highlight grilling over live fire, and wood oven roasting. The restaurant aims to leverage the seasonal ingredients to full capacity with fresh preparations, along with preserving, pickling and smoking. Menu standouts will include delectable starters, salads and entrées such as Swedish Meatball Sliders, Venison Tartar, Nordic Rye Flatbread, Bone Steak, Alaskan Red King Crab, Pork Schnitzel, Dover Sole, and more. A sampling of Eldr+Rime's craft libations include Birch Sour, Scandinavian G&T, Thyme for the Bramble and, in a true nod to one of Wisconsin's most notable cocktails, Gufa Old Fashioned.
Coming to Milwaukee and Eldr+Rime from Chicago's western suburbs, Executive Chef Gary Baca has expertly led several restaurants over his career spanning more than two decades. Specializing in steak, seafood and progressive American cuisines, Baca most recently worked at Michael Jordan's Steak House and has previously been the Executive Chef and Partner at Lettuce Entertain You, overseeing culinary operations at Chicago's Joe's Seafood, Prime Steak & Stone Crab, Scoozi and more.
Eldr+Rime's design is courtesy of Simeone Deary Design Group. In an ode to land and rustic natural environments with emphasis on Scandinavian simple well-crafted design, the façade of Eldr+Rime evokes images of a modern barn, filled with large wooden tables, chairs and benches. The space is filled with warm tones of light birch and oak wood set against a backdrop with layers of textures from knit sweaters, tile details and greenery. The large bay windows in the dining room ensure the land can be seen and is an active participant in the ambience of the space. With fireplaces abound and ample outdoor seating complemented by the color palette, which juxtaposes contemplative blues with fire-roasted reds, guests are invited to experience harmony of the senses and hygge incorporated throughout the restaurant, both indoors and outside.
